The good  people of Louisiana are warm and giving and so much fun to be with. I love trying to understand good ole Cajun talk.   If you aren't careful, you won't understand them.   It's fun trying!

Mardi Gras is French for Fat Tuesday which is the last day of Mardi Gras celebration. It corresponds to Shrove Tuesday which is the last day before the Lenten  season in the Christian tradition

How to Speak Cajun - !~*The Cajun Bayou*~!

Don't forget... Mardi Gras is celebrated in many states...not just Louisiana AND many countries
(for example -- In Brazil and some other countries, it's called Carnival or Carnaval.  There are other names as well in localized areas)

Mardi Gras came to the US around 1699 by French explorer, Sieur d’Iberville. From 1827 to 1833 the New Orleans Mardi Gras celebrations became similar to what they are today. The Mardi Gras Ball started that year as well.  
Mardi Gras in America was actually begun in Mobile, Alabama in 1703, a year after its {founding;} in 1857, members of a Mobilian mystic society brought Mardi Gras to New Orleans.

Interesting thing about this picture...this is Oak Valley Plantation outside New Orleans (the most photographed plantation).
You will notice there is no Spanish moss dripping from these Live Oaks.  The mistress of Oak Valley didn't like Spanish moss so she had it all removed .

...watching the "wild kingdom" inspires you to write a cookbook. think a lobster is a crawfish on steriods. take a bite of 5-alarm Texas chili and reach for the tabasco. pass up a trip abroad to go to the crawfish festival in Breaux Bridge.

...your description of a gourmet dinner includes the words "deep fat fried."

...your mama announces each morning, "well, I've got the rice cooking-what will we have for dinner?" sit down to eat boiled crawfish and your host says "don't eat the dead ones" and you know what he means. don't know the real names of your friends, only their nicknames. gave up tabasco for lent.

...your dog thinks the bed of your pickup is his kennel.

One night, a torrential rain soaked Southern Louisiana; the next morning the resulting floodwaters came up about 6 feet into most of the homes there.
Mrs. Boudreaux was sitting on her roof with her neighbor, Mrs.Thibodeaux, waiting for help to come. Mrs. Thibodeaux noticed a baseball cap, floating near the house.
Then she saw it float far out into the front yard, then float back to the house; it kept floating away from the house, then back towards house.
Her curiosity got the best of her, so she asked Mrs. Boudreaux, "Do you see dat dere baseball cap a floatin' away from the house, den back again?"
Mrs. Boudreaux said, "Oh yeah, dass my husband; I tole him he gonna cut the grass today, come hell or high water."

Pierre and Boudreaux was flying Cajun Airlines to da Mardi Gras. Boudreaux was flying da plane, and Pierre was in da back foolin wit da cargo equipment an stuff.
Da plane hit some turbulence an started bouncin around and Boudreaux got knocked unconscious. Den da plane start driftin. Pierre come run up to da front an Boudreaux was sprawl out all over da steerin wheel.
Well, Pierre don't know nuttin bout flyin an he start to get panaky. He grab da microphone and holla "May Day! May Day! Dis is Cajun Air Line 90210. Boudreaux, him knock unconscious an I don know nuttin about flyin dis plane!"
"Dis is da control tower," Someone answer. "Don you worry a bout nittin. We gonna splain how you to land dis plane, step by sep, ah gar-own-tee! Jus leave anyting ta us. Fus, how high yu are, an whas you position?"    Pierre thought a minute, den say, "I'm five foot ten an I'm all day wa to da front of da plane."
"No! No! No!" answer da tower. " What you altitude, an where you location?"
Pierre say, "Man, rat now ah got a po attitude, an ah'm from Thibodeaux, Laweezeeanna!"
" No! No! No!" came an exasperated voice. " Ah needs to know how many feet you got off da groun an how you plane in relation to da airport!"
Pierre, he start to panic by dis time. He say, "Countin Boudreaux's feets an mine togedder, we got fo feet off da groun an I don believe dis plane related to you airport!"
A long pause-----de silence was deafanin.
"We needs to know whoo you next of kin."
